Mix the dry ingredients
¼ cup flour (gluten free or otherwise)
½ teaspoon baking powder
¼ teaspoon baking soda
Mix the wet ingredients
½ cup cottage cheese
1 egg
½ teaspoon vanilla
1 tablespoon milk
Heat a teaspoon of olive oil in a large non-stick skillet.
Add the dry ingredients to the wet, mix well, and dump it in the pan.
Cook about 4 minutes per side until golden.
Serve with apple sauce.

Wow, Suzanne, I bet the cottage cheese flavour really enhances the flavour of the pancakes and apple sauce on top sounds delicious. I can’t stand the taste of syrup, so always eat my pancakes with peanut butter, but apple sauce would be so much better.
Also, I don’t make the pancakes in our house. My pancakes come out ‘flatter than a pancake’, so on pancake night, one of my guys does the honor. 🙂
I wish I had a “pancake maker”…
