This Broccoli Cauliflower Soup is designed to give you that feeling of fullness, without the calories!
In a large soup pot combine:
2 heads broccoli
1 head cauliflower
1 large tomato, peeled
Cut it up in the pot, or if you’re in a hurry, just toss it in.
Add:
750 ml lo sodium chicken broth
250 ml water
Bring to a boil and simmer about 20 minutes until tender.
Mash it up with a potato masher.
Stir in:
1 – 10 oz can of cream of mushroom soup
½ tsp each of pepper, basil, dill
Heat again.
Blend it with a hand mixer in the pot – partially if you like chunky soup, totally if you like it really creamy.
The only calories are about 200 calories from the soup – which divided between several servings is next to nothing. Good for those times when you feel hungry but want to save yourself for the next party.
To make it a meal, top bowl with an ounce of shredded cheese.
